Though Upma is made of rava,it is now being made with various other ingredients like Vermicelli also. I love all the recipes with Vermicelli. This is one of the easiest dishes that could be prepared in less time and that too with my favorite Vermicelli. MTR Vermicelli is always there in my shelf. Sometimes I replace Breadcrumbs with Vermicelli while doing Cutlets, which after deep frying looks like a small bird nest.
Vermicelli Upma is my all time favorite. In my mother tongue we say it as Semige Upitu or shavige Upitu. Whenever I wake up late in morning and left with very less time for my hubby to leave for work I just prepare Vermicelli Upma. Within in no time Vermicelli Upma will be on the table with tea.
My mom used to prepare it as a evening tea snack or sometimes as a breakfast. She also knows to prepare Vermicelli Pulav. So here is the recipe for Vermicelli Upma which my mom usually makes:
Ingredients:
- Vermicelli - 1 Cup
- Cooked Vegetables ( Carrot, Frozen Peas, Beans, Capsicum, any vegetable...)
- Chopped Onions - 1/3 Cup
- Sliced Chilli - 1
- Water - 1½ Cup
- Mustard Seeds - a pinch
- Urad Dal - a pinch
- Curry leaves - 5 to 6 leaves
- Coriander Leaves for garnishing
- Grated Coconut (optional) - 2 tbsp
- Oil - 2 tsp
- Salt as per the taste
Method:
- Fry Vermicelli in ghee untill golden brown or untill you get a nice aroma and set aside.
- In a pan take 1 tsp of oil and boil
- To this boiled oil add mustard seeds, Once mustard seeds splatters add urad dal, curry leaves, chilies and finely choppedOnion and saute for 2-3 mins.
- Now add 1½ Cup of water, cooked vegetables, salt.
- Bring water to boil, add fried Vermicelli and cook for 5 mins.
- Garnish it with finely chopped coriander leaves and grated coconut.
P.S:
- cocnut gives a flavour to Vermicelli Upma
- If vermicelli is not fried properly, it becomes soggy.
- This full recipe has to be done in a medium heat.
